To all of Eddy's family: My sincere condolences at this difficult time. I lived across the street from Eddy and worked for him at the restaurant in Henrietta, N.Y. Later I was stationed in Mons, Belgium with the U.S. Navy and was able to share my experiences with him about his native country. Eddy was a very nice man who I am glad to have known.

I was a student of Mr. Callens. He was my absolute favorite teacher. His warm heart and passion for cooking and teaching shined very brightly. It was a pleasure knowing him and studying under him even it was such a short time. It is a great loss to no longer have Mr. Callens to teach and share his positive attitude but I hope that he is resting peacefully. My condolences to the Callens family on his passing.

I have so many fond memories of working with Eddy at MCC and watching him (fold napkins!) on TV and of being a lucky recipient of his delicious truffles at holiday time. I'm so saddened by his death but happy that he is now at peace. My sincere sympathy to his family and friends.

I remember a man with a fantastic smile and generous spirit. So talented and so willing to share that talent with all who knew him. I remember a gentle man who found a love that will continue through to eternity. Blessings and peace of heart to you all as you remember this wonderful man who has touched the hearts and lives of so many. We all will miss you Eddy.

I was a student of Mr. Callens at Monroe Community College. He was an amazing instructor and he made me feel I could do anything I set my mind to. He definitely touched my life.

My first experience in college found me in MCC's Food Service Program. I remember Mr. Callens was always smiling and happy. He taught in a way that students wanted to listen to him. He had a cool accent too. That was back in 1977, when Rund's was still around.
